Happy Monday! Today I want to share with you a colorful and delicious recipe. This peach, blueberry and Greek yogurt cake has become a breakfast favorite at home for obvious reasons. We love fruit cake and tarts. I guess it is the mixture of healthy fruit and sweet tooth satisfaction. With food, and clothes too, the first impression is the most important. If I like what it looks like I’ll most likely eat/buy it. 

Peach, Blueberry & Greek Yogurt Cake Recipe

I know that most of us don’t like using the oven in summer because it’s already hot enough at home… but it’s even harder to give up our baking obsession, right?
Without further ado, here’s the recipe.


Shopping list

1 and 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 stick butter, softened
1 cup sugar
2 eggs
1/2 teaspoon vanilla
1/2 cup Greek yogurt
2 peaches, sliced into wedges
6 oz blueberries
1 teaspoon granulated sugar


Directions

  1. Preheat oven to 350°F (180ºC). Grease the side and the bottom of a 9 inch (22cm) round cake pan with butter.
  2. Mix flour, baking powder, baking soda in a medium bowl.
  3. In another bowl, beat butter, sugar, and eggs until the mixture is fluffy and light in color. Add vanilla and Greek yogurt and continue beating until creamy. Then add the flour and mix until combined.
  4. Transfer the cake batter to the pan. Top it with sliced peaches, and blueberries. Sprinkle the fruit with 1 teaspoon granulated sugar.
  5. Bake until cake turns golden. Use a toothpick to check that it is cooked. Insert the toothpick, if it comes out clean, your cake is ready. It should take about 1 hour.
  6. Midway through baking, you should put some extra peach slices and extra blueberries on top of the cake because the ones you added first are bound to sink into the batter. Then, put the cake back in the oven and continue baking.
  7. When the cake is done, let it cool and finally sprinkle some powdered sugar on top.

  2. Gorgeous looking cake. I miss Antrhopologie. When we lived in Florida I could spend hours browsing through their shop, I love their clothes (most of them!) their homewares, pretty much everything. Alas we don't have one in France, I shall have to get my fix on line!!! I don't know if I should thank you or very much not thank you as I have a feeling I may be using my credit card!!!
