I’m always on the lookout for new recipes to try. Some work, some don’t. Some become favorites for life. The later was the case of this pumpkin French toast casserole. I found a mouthwatering pic browsing on Pinterest on a Sunday afternoon and it was love at first sight.

Since then I’ve baked it a few times and each time I like it more. The sweet taste of pumpkin, French toast and pecans is outstanding. I’ve also done different versions in rectangular or round molds. Unfortunately, there’s a key ingredient which appears in the original recipe that I’m unable to find in Spain: pumpkin spice. Maybe it’s available in specialized stores but not in regular supermarkets. If you know where to find it, let me know.

I remember having pumpkin spice lattes from Starbucks in autumn while living in California. It was my favorite drink of the season. Ah, those were good times… 🙂

Without further ado, here’s the recipe.

Ingredients
1 (day old) bread, diced
2 cups milk 
½ cup heavy cream
1 cup granulated sugar (200 gr)
6 large eggs
1 cup pumpkin puree
2 tablespoons vanilla

Indredients for streusel
½ cup brown sugar (100 gr)
½ cup cold salted butter, diced (115 gr)
½ cup all purpose flour (70 gr)
chopped pecans (as many as you like)

Directions
1. Put the diced bread inside a baking pan. You can coat the pan with butter previously so that it won’t stick.
2. Whisk together the eggs, milk, cream, sugar, pumpkin and vanilla in a bowl. Then pour the mixture over the bread. Cover it with a plastic wrap and refrigerate for at least 4 hours.
3. Once it’s ready, you have to prepare the streusel. For that you have to mix the brown sugar, butter, flour and pecans in a bowl. Use your finger tips. Then sprinkle the streusel mixture over the french toast casserole.
4. Now it’s ready to bake. Preheat the oven to 350ºF (180ºC). Bake for 1 hour or until thoroughly cooked. Let it cool down and serve with powdered sugar on top.
